Toni's Meatloaf

Meatloaf  (from our niece Toni)

1 lb ground beef
1 pkg of Scaffetta's Italian Seasoning Mix
1 egg
1 tomato, diced
1/2 cup plain bread crumbs
1/2 cup beef stock
 
Mix all ingredients except broth, place in loaf pan, and pour broth in pan.
Bake at 350 degrees until internal temperature reaches 160 degrees, basting occasionally with beef stock.  Makes a great meatloaf sandwich with fontina cheese on top.
